Lemon Poppy Seed Protein Pancake Bowls (healthy + easy meal prep)
Ingredients
Method
- Preheat oven to 180°C.
- Add all base ingredients directly into an oven-safe bowl and mix until smooth, including lemon juice, lemon zest and poppyseeds.
- Top with blueberries and white chocolate chips.
- If meal prepping, repeat ingredients in separate bowls, can make as many bowls as you like (don’t mix a giant batch-this keeps macros accurate).
- Bake for 20–22 minutes until set and lightly golden.
- Let cool for 5–10 minutes, then serve with sugar free maple syrup, monkfruit icing sugar and a lemon wedge.
