Lemon Poppy Seed Protein Pancake Bowls (healthy + easy meal prep)

These Lemon Poppy Seed Protein Pancake Bowls are soft, fluffy, and taste like a lemon muffin- but with over 30g of protein and perfect for meal prep.

Ingredients
  

  • 1 egg
  • 50 g Greek yogurt vanilla or plain
  • 60-70 ml milk of choice
  • 35 g flour all-purpose, oat or GF
  • 25 g protein powder vanilla or white chocolate works best
  • 1 tsp sweetener optional
  • 1/2 tsp baking powder
  • Zest of 1/2 lemon
  • 1/2 lemon juiced
  • 1/2 tsp poppy seeds
  • 25 g blueberries
  • 5 g sugar free white chocolate chips

Method
 

  1. Preheat oven to 180°C.
  2. Add all base ingredients directly into an oven-safe bowl and mix until smooth, including lemon juice, lemon zest and poppyseeds.
  3. Top with blueberries and white chocolate chips.
  4. If meal prepping, repeat ingredients in separate bowls, can make as many bowls as you like (don’t mix a giant batch-this keeps macros accurate).
  5. Bake for 20–22 minutes until set and lightly golden.
  6. Let cool for 5–10 minutes, then serve with sugar free maple syrup, monkfruit icing sugar and a lemon wedge.

Notes

Note: This recipe is for one bowl, but I like to make multiple bowls at 1 time for meal prep. I add each ingredient separately to each bowl so that every bowl is equal and is at the same amount of calories/volume.
