- 1/2 tsp chilli flakes or ground chilli optional
- 1/2 tsp onion powder
- 1 tsp dried oregano
- salt to taste
- pepper to taste
Ingredients Per Bowl (4 bowls in total)
- 1 chicken thigh 150g
- 250 g spud lite potatoes sub charisma or baby potatoes
- 1/2 tsp olive oil
- 1 tsp seasoning mix recipe above
Wet Mix (divided evenly between 4 bowls)
- 1/2 cup chicken stock
- 1 lemon juiced
- 1 tbsp garlic paste or 8-10 minced garlic cloves
- 1 tsp olive oil
Instructions
- Preheat oven to 180°C (350°F).
- Place chicken and potatoes in each individual glass bowl/tupperware. Drizzle with olive oil and toss with 1 tsp seasoning mix per serving to coat well.
- Bake for 30 minutes.
- Remove from the oven and divide the wet mix evenly among the bowls.
- Return to the oven and bake for an additional 20-30 minutes until chicken is cooked through and potatoes are tender.
- Garnish with dried parsley if desired and let cool before sealing for storage.
