Tips for the Best Honey Soy Chicken Bakes
1. Don’t skip the foil for the first 30 minutes: Covering the dish traps steam which cooks the rice and keeps the chicken incredibly juicy. Removing the foil for the last 10 minutes is what gives you that sticky, caramelised top. Both steps matter.
2. Make sure your rice is submerged: Before going into the oven, give the rice base a stir to make sure the grains are sitting in the liquid, not piled up dry. The liquid ratio is intentionally small so the rice comes out flavour-packed rather than mushy.
3. Add the cornflour to the marinade: Mixing the cornflour into the sauce before it goes on the chicken means it thickens as it heats, creating that glossy sticky glaze rather than a watery sauce.
4. Rest before serving: Five minutes out of the oven makes a real difference. The rice finishes absorbing the liquid and the chicken stays juicier when you slice it.
Storage & Meal Prep
Fridge: Store in an airtight container for up to 4 days. This reheats really well – the rice actually gets even more flavourful the next day.
To reheat: Microwave with a splash of water or extra chicken stock to loosen, covered, for 2–3 minutes.
Freezer: Portion into individual containers and freeze for up to 2 months. Thaw overnight in the fridge and reheat as above.
