Honey Soy Chicken Bakes

Tender chicken breast baked in a sticky honey soy marinade over flavour-soaked brothy rice and veggies - all in individual bowls. A high-protein, low-effort dinner that tastes like it took way more work than it did.

Ingredients
  

Brothy Rice Base (per bowl):
  • 3 tbsp 50g dry rice
  • ¼ cup chicken stock
  • 1 tsp bone broth about 10g
Chicken:
  • 500 g chicken breast
Honey Soy Marinade:
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 4 cloves garlic minced
  • 1 tsp ginger minced or grates
  • 1 tsp cornflour
  • 2 tbsp hot water
Veggies (per bowl)
  • 1/4 Frozen peas carrot & corn mix (as much as you like)
To Serve:
  • Sliced green onion
  • Sesame seeds

Method
 

  1. Mix the honey soy marinade and add 1/2 of it to the chopped chicken breast, mix until the chicken absorbs all the liquid.
  2. preheat oven to 180c or 356F.
  3. Per oven safe glass bowl add 3 tbsp washed basmati rice, chicken stock, dash of the honey soy sauce, and bone broth, mix well.
  4. Add 1/4 cup frozen mixed veggies to each bowl and equally divide the chicken breast onto each bow.
  5. Cover the Bowls with foil and bake for 30 minutes , remove the foil then bake for another 10 mins.
  6. Garnish with green onion and sesame seeds.
