Ingredients & Substitutions for Berry Cheesecake Overnight Oats
Oats- This recipe uses rolled oats, but you can use quick oats, just use slightly less liquid
Protein Powder- I use a vegan based protein from MacroMike, use my code amb-eliyaeats to save 10% (I am a proud MacroMike Ambassador!) The flavour I use in this particular recipe is Strawberry Thickshake but vanilla also works super well in this recipe!
Sweetener- I use a zero calorie sweetener Natvia, but it is totally optional, the oats will be quite sweet from the protein + berries. You could use any sweetener including maple syrup or honey
Soy Milk- You can sub for any milk of choice
Light Cream Cheese- essential for the “cheesecake” flavour, you can sub for normal cream cheese, or vegan cream cheese
Yogurt- Essential to provide creaminess & thickness to the cheesecake layer. I use a high protein vanilla flavoured greek yogurt however plain greek yogurt will work super well. I use Yopro High Protein Vanilla Greek yogurt
Sugar Free Maple Syrup- Optional, you can use honey or normal maple syrup instead
Berries of choice- I like to use blueberries and raspberries, but you can use any kind of berries
Tips
Let the oats set in the fridge- I recommend leaving it for 8 hours (overnight) or a minimum of 5 hours
Let the oats layer sit in the freezer- When whipping up the cheesecake layer, that way it will be easier to spread over the oats layer
Meal prep- Overnight oats will last up to 5 days in the fridge, so this is perfect for meal prepping. I would suggest adding the berries the day of consumption as they can release a lot of water into the oats (it’s not appetising)
How to Store Berry Cheesecake Overnight Oats
Store the overnight oats in the refrigerator in airtight containers or jars for up to five days.
If using fresh fruit in the oats, I would add them the day of as they can release a lot of water into the recipe and overtime, it is not as appetising.
After 3 days or so you may find that the liquid has separated slightly from the oats, just give it a quick stir before eating.
Berry Cheesecake Overnight Oats
Ingredients
Oat layer
- 40 g rolled oats
- 30 g protein powder I use a strawberry flavour but vanilla works great
- 5 g zero calorie sweetener about 1/2 tbsp, optional
- 80 ml soy milk or any plant milk
Cheesecake Layer
- 20 g light cream cheese
- 60 g yogurt vanilla or plain
- 10 ml sugar free maple syrup can sub for honey or normal maple syrup
- 50 g berries of choice fresh or frozen, I use raspberries and blueberries
Instructions
- Start by mixing oats, protein powder, berries, sweetener and soy milk in a jar or mini ramekin, place in the freezer while preparing the cheesecake layer. Yo
- Mix light cream cheese with a tsp of hot water or place in the microwave for 5-10 seconds to soften
- Add the yogurt and maple syrup and mix until no clumps remain
- Spread on top of the oats layer until even
- Mash some berries and swirl on top of the cheesecake layer
- Place in the fridge overnight or minimum of 5 hours
- Serve with some extra fresh berries and enjoy
