Ingredients & Substitutions for Healthy Gingerbread Cookies
All purpose flour – This is the main dry ingredient, you could sub for spelt flour, oat flour or a gluten free flour mix. However the texture may change depending on the flour used.
Sugar free icing sugar alternative- Like powdered erythritol or monkfruit. This is optional, you can replace with equal parts normal icing sugar. A finer sugar works much better in this recipe than granulated.
Cornstarch- Helps bind the dough together & helps the cookies keep their shape
Ground Ginger- Essential for that classic gingerbread flavour (duh!)
Cinnamon- Essential for that classic gingerbread flavour
Nutmeg- Essential for that classic gingerbread flavour
Cloves- Essential for that classic gingerbread flavour
Baking Soda- Essential for texture (not baking powder!)
Molasses- Essential for texture and that classic gingerbread flavour. However this can be subbed for maple syrup or honey.
Butter- This can be subbed for equal parts oil. I would not recommend keeping this recipe oil free as it is essential for that classic cookie texture
Egg yolk- Helps with binding and texture, can be replaced with 50g apple sauce
Vanilla- for flavaaaa
Tips
- Chill the dough for 5 minutes to firm so that rolling will be easier
- If the dough is too dry, add a tsp of milk/water
- Roll out the dough between parchment to prevent sticking. Do this for sure if you skipped chilling the dough
- Bake for 8 minutes if you like a softer cookie, or 10 minutes if you like a firmer cookie
- If you want your cookies to be more crunchy, roll out the dough slightly thinner
How to store Healthy Gingerbread Cookies
Room Temperature- Store in a airtight container for 1-2 weeks
Refrigerator- I would not recommend storing in the fridge as the cookies will dry out
Freezer- Individually wrap each cookie in foil or baking paper and add into a ziplock bag or airtight container for up to 3-4 months

Can I make it gluten free?
You can, just substitute equal parts oat flour or a gluten free flour mix. Almond flour would work great due to its high fat content, just use 30g butter or oil instead of 50g.
How Can I make this recipe Vegan?
By using equal parts oil or a vegan butter and substituting the egg yolk for 50g apple sauce.
The Best Healthy Gingerbread Cookies
Ingredients
- 50 g butter melted and slightly cooled
- 1 egg yolk room temp
- 40-50 g molasses not blackstrap
- 1/2 tsp vanilla
- 140 g all purpose flour
- 1 tsp cornstarch
- 60 g zero calorie icing sugar alternative Can use normal icing sugar, or blend a zero calorie sweetener until fine
- 1/4 tsp baking soda
- 1.5 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cloves
- 1/8 tsp salt
Instructions
- Pre-heat oven to 160c or 320f
- Melt butter and let it cool
- Whisk the melted butter and sweetener until well combined
- Add in the egg yolk, vanilla, molasses and spices and whisk until well combined
- Sift through the flour, baking soda, cornstarch and salt and using a spatula, fold the ingredients until a slightly sticky dough forms
- Refrigerate for 5 minutes to allow the dough to firm up
- Roll out on lightly floured surface, or between two pieces of parchment paper to either 1/4 inch thick or 1/8 inch thick (depends on your preference)
- Cut out as many gingerbread men, then re-roll the dough and cut, until all the dough is used up (this recipe makes 36-40 gingerbread men). Bake 20 at a time
- Bake for 8-10 minutes, then let the cookies rest in the pan for 5 minutes before enjoying as is or icing (details in the notes below)
