Method
- Pre-heat oven to 160c or 320f
- Melt butter and let it cool
- Whisk the melted butter and sweetener until well combined
- Add in the egg yolk, vanilla, molasses and spices and whisk until well combined
- Sift through the flour, baking soda, cornstarch and salt and using a spatula, fold the ingredients until a slightly sticky dough forms
- Refrigerate for 5 minutes to allow the dough to firm up
- Roll out on lightly floured surface, or between two pieces of parchment paper to either 1/4 inch thick or 1/8 inch thick (depends on your preference)
- Cut out as many gingerbread men, then re-roll the dough and cut, until all the dough is used up (this recipe makes 36-40 gingerbread men). Bake 20 at a time
- Bake for 8-10 minutes, then let the cookies rest in the pan for 5 minutes before enjoying as is or icing (details in the notes below)

Icing recipe:
I make my own sugar-free royal icing but combining 2 pasteurized egg whites, 1/2 tsp cream of tartar, 1/4 tsp vanilla and about 1/3 cup zero calorie icing sugar alternative (can use normal icing sugar). Whisk until glossy stiff peaks and pipe onto the cookies.
