Ingredients for Spicy Peanut Gochujang Noodles with Turkey Mince
- 180g Thin wheat noodles: I love using Chef’s world thin noodles as I buy them in bulk- it comes in a 2kg pack, and each serving of noodles is 62.5g (they are already pre portioned!)- it comes to 233 calories per serve. It’s also good $5.50 on Amazon for the 2kg pack, super affordable! This recipe uses 3 serves of these noodles.
- 400g Turkey Mince– can substitute for chicken, tofu or beef mince.
- 100g Frozen Veggies- I use a mix of peas corn and capsicum
- 50g Gochujang Paste- I use this the Ottogi brand– You can find this paste at most grocers in the asian section or at your local asian grocer.
- 25g Smooth Natural Peanut Butter
- 20g Powdered Peanut Butter– I use MacroMike– V2 SWEET ORIGINAL POWDERED PEANUT BUTTER– You can substitute this for normal peanut butter
- 25ml Low Sodium Soy sauce
- 1 tbsp sugar or zero calorie sugar alternative– I use Natvia zero calorie sweetener
- 1-2 cloves garlic, minced
- 10g Bone Broth Paste– OPTIONAL, can sub for stock concentrate
- 1/4 Cup Noodle Water
How to make Spicy Peanut Gochujang Noodles with Turkey Mince
- Cook noodles as per packet instructions (reserve 1/4 cup noodle water)
- Mix sauce ingredients until no clumps remain – add some boiling water to thin it out and make it easier to mix
- Cook turkey mince on medium heat with some oil for 8-10 minutes
- Add frozen veggies halfway through
- Add the sauce and noodle water and let thicken for 2-4 minutes
- Add the cooked noodles and mix until fully combined
- top with some sesame seeds and green onion

- 180 grams Dried Thin Noodles 3 serves
- 400 grams Raw Turkey Mince
- 100 grams Frozen veggies Peas, corn, capsicum
- 5 ml oil neutral oil for frying- I use avocado oil
Sauce
- 50 grams gochujang paste 2 heaped tbsp
- 25 grams smooth natural peanut butter around 1 heaped tbsp
- 20 grams powdered peanut butter can sub for normal peanut butter
- 25 ml Low sodium soy sauce
- 1 tbsp sugar or zero calorie sugar alternative
- 1-2 cloves garlic minced
- 10 grams bone broth paste can omit or sub for stock concentrate powder/paste
- 1/4 cup noodle water reserved
