This recipe is super easy and straightforward to make! There is no blender of fancy equipment needed and they actually set rather quickly, they usually take 30-60 minutes in the fridge (but much faster in the freezer).

Can I use rice cakes instead of corn thins?
I recommend corn thins over rice cakes as they are crunchier and have a salty taste to them, providing an extra depth of layer and texture that, in my opinion, rice cakes don’t provide. However feel free to use them in this recipe.
What protein powder do you recommend?
My favourite protein powder brand is MacroMike, use my code amb-eliyaeats to save 10% (I am a proud MacroMike Ambassador!) The protein I actually used in this recipe is their Caramelised White Chocolate Premium Protein, but you can any protein powder. Flavours I would recommend are vanilla, caramel or white chocolate.
What can I use instead of protein powder?
You can omit the protein powder completely however I recommend it as it adds extra flavour and protein to the recipe.
How can I make this vegan?
I love using Cadbury’s white chocolate, and my runner up has to be Lindt white chocolate, I love their excellence white chocolate, or just their plain white chocolate (super creamy and melts amazingly).
If you are vegan, you can use dairy free white chocolate. Some good brands include: Pascha, Enjoy Life, or Sweet William.
If you prefer to use sugar free chocolate, some good brands include: Sugarless Confectionery, Lily’s, Vitawerx (bonus for extra protein) & noshu (my personal fave).
What can I use instead of sugar free maple syrup?
Feel free to use normal maple syrup or honey (or any syrup/liquid based sweetener) in place. It is important to use a syrup based sweetener to bind the corn thins and protein together.
Tips and how to Store Lemon White Chocolate Protein Slice
- Feel free to double or triple the recipe, just multiply the ingredients by how many serves you want to make e.g 12= double the recipe or 18 serves= triple the recipe
- Since these protein bars do not have added preservatives, they will spoil if left out on the counter. They must be stored in the refrigerator
- Refrigerator- lasts 1 week
- Freezer- lasts up to 6 months (just thaw in the fridge before consuming)
Lemon White Chocolate Protein Slice
Ingredients
- 8 corn thins 48g
- 40 grams protein powder 1 scoop, vanilla, caramel or white choc
- 40 ml sugar free maple syrup or normal maple syrup
- 1 tbsp lemon juice about 1/2 lemon
- 1-2 tsp lemon zest to taste, reserve some for top
- 60 grams white chocolate
Instructions
- crush the corn thins with your hands and add to a bowl
- Add protein powder, lemon juice, lemon zest and maple syrup and mix until well combined and a sticky layer forms
- Pat down base on small rectangular pyrex dish (700ml-1L) or baking dish that is lined with baking paper
- Melt white chocolate and evenly spread on the top of the base
- Sprinkle extra lemon zest on the top of the white chocolate
- Refrigerate for minimum 30 minutes before slicing into 6-8 even bars
