Ingredients
  

  • 8 corn thins 48g
  • 40 grams protein powder 1 scoop, vanilla, caramel or white choc
  • 40 ml sugar free maple syrup or normal maple syrup
  • 1 tbsp lemon juice about 1/2 lemon
  • 1-2 tsp lemon zest to taste, reserve some for top
  • 60 grams white chocolate

Instructions
 

  • crush the corn thins with your hands and add to a bowl
  • Add protein powder, lemon juice, lemon zest and maple syrup and mix until well combined and a sticky layer forms
  • Pat down base on small rectangular pyrex dish (700ml-1L) or baking dish that is lined with baking paper
  • Melt white chocolate and evenly spread on the top of the base
  • Sprinkle extra lemon zest on the top of the white chocolate
  • Refrigerate for minimum 30 minutes before slicing into 6-8 even bars
