This recipe produces a creamy super tasty and filling cheesecake that will not only satisfy your cravings, but will make you feel good!
There is no mixer needed, no water bath and they cook in less than 2 minutes, what more could you want?
Tips to make the perfect Microwave Cheesecake?
- Soften cream cheese in microwave first for no more than 10 seconds
- Mix the ingredients well and make sure there are no clumps
- Cook in 15 second intervals, checking on the cheesecake after ever interval
- Cook the cheesecake for a max of 90 seconds (depends on your microwave & wattage)
- Perfect timing for my microwave was 1 minute
- Stop the microwave once you see bubbles form in the centre (usually happens between every interval)
- Signs that the Cheesecake is ready to be taken out of the microwave: a jiggly centre and a firm edge
- Let it cool for 10 minutes before popping in the freezer for 30 minutes (if you want to eat it as soon as possible), or in the fridge for 1 hour or more (great if you are prepping) the cheesecakes for later)
- Ensure you allow the cheesecake to rest for the flavours and texture to fully develop
Ingredients and Substitutions
What kind of Yogurt should I use?
I always recommend a higher protein option, the one I use is Yopro High Protein Vanilla Greek yogurt, but I would also recommend Chobani or even Chobani Fit for extra added protein.
What protein powder do you recommend?
My favourite protein powder brand is MacroMike, use my code amb-eliyaeats to save 10% (I am a proud MacroMike Ambassador!) The protein I actually used in this recipe is their Cookies & Cream Plant Protein Pudding, but you can use normal protein powder. Flavours I would recommend are vanilla or cookies & cream.
What can I use instead of protein powder?
You can sub the protein powder for 5g flour or 5g cornstarch
Do I have to use egg whites?
You can omit the egg whites out completely however it will impact the final texture slightly
How can I make this vegan?
Simply omit the egg white, and use a plant based yogurt and cream cheese
What cream cheese should I use?
I use light philadelphia cream cheese, but you could use any that you have on hand
Do I need to add whipped cream on top?
No it’s completely optional but highly recommended
1 Minute High Protein, Low Calorie Cookies and Cream Cheesecake
Ingredients
- 1//2 oreo biscuit for the base, then save the other half for the filling
Filling
- 30 grams light cream cheese softened in microwave for around 5-10 secs
- 60 grams vanilla yogurt
- 10 grams natural/zero calorie sweetener
- 1 egg white
- 16 grams protein powder I use cookies and cream protein pudding powder
- 1/2 oreo biscuit reserve some for topping
Topping
- 15 grams light whipped cream optional
Instructions
- Add 1/2 crushed oreo to the base of your mug or cup
- Mix softened cream cheese with yogurt, sweetener, protein powder and 1 egg white with a whisk until no clumps remain
- Add crushed oreo and lightly whisk
- Add on top of the oreo crumb
- Microwave for 45 seconds-1 minute at 15 second intervals until firm on the edges and jiggly in the middle (make sure to stop every 15 seconds and check up on it, cooking times may vary from 45 seconds to 90 seconds, just keep an eye on it)
- Remove from microwave and let cool at room temp for 10 minutes
- Add to freezer to cool for 30 minutes or fridge for 1 hour +
- Top with light whipped cream and some oreo crumbs
