Ingredients and Substitutions for V-Day Protein Rice Crispy Treats
Butter- Can use normal, vegan or light butter
Marshmallows- I use sugar free marshmallows, but any will do
Protein Powder- I use a vegan vanilla flavoured protein from MacroMike. If using a whey protein, use less liquid. My affiliate code for Macromike is AMB-ELIYEATS (saves you 10%!)
Plant Milk- I use soymilk, but you can use whatever plant milk or even normal milk
Rice Bubbles/Crispies- Can use any brand, I would recommend trying to find one lower in sugar
Soy Protein Crisps– Literally has the same texture as rice bubbles but its so high in protein! You can substitute this for equal parts rice bubbles. I use this brand from Coles, however for my American readers, I’ve found this brand on Amazon.
White Chocolate- I prefer to use a sugar free white chocolate alternative. My go to is the Noshu White Chocolate Chips. However, any good quality white chocolate will work and you can use chocolate chips or a chocolate block and just chop into small chunks
Pink Food Colouring– Optional, It just helps with the V-Day vibes and its super cute!
Tips
- Use unsalted butter: This will help you control the overall salt content of the recipe and prevent the treats from becoming too salty.
- Be careful when melting the marshmallows: Overheating the marshmallows can cause them to become too soft and gooey, leading to a sticky mess.
- Mix in your favorite ingredients: For added flavor, you can mix in ingredients like dried fruit, nuts, or chocolate chips.
- Line the pan with parchment paper: This will prevent the treats from sticking to the pan and make it easier to remove them.
- Chill the treats before serving: Chilling the treats for a few hours can help them firm up and become easier to cut into bite-sized pieces.
- Use a cookie cutter to cut out shapes

Room Temperature: Store in an airtight container for a couple of days

V-Day Protein Rice Crispy Treats
Ingredients
- 30 g unsalted butter
- 200 g sugar-free marshmallows or regular marshmallows
- 150 g rice bubbles/crispies
- 100 g soy protein crisps or rice bubbles/crispies
- 100 g vanilla protein powder
- 80-100 ml soy milk or any milk
- 25 g sugar-free white chocolate or regular white chocolate
- 1-3 drops pink food colouring optional
Instructions
- In a small bowl, prepare your protein slurry by mixing 50g protein powder with the 80ml almond milk until it becomes thick.
- In a large saucepan, heat the butter over medium heat until it has melted slightly
- Add the marshmallows to the saucepan and stir continuously until they have melted
- Stir in the protein slurry, and the rest of the protein powder and continue mixing until they are well incorporated into the melted marshmallow mixture
- Remove the saucepan from the heat and add the Rice Bubbles and soy protein crisps, mixing until they are well combined with the mixture
- Line a 9×13 inch baking pan with parchment paper and pour the mixture into the pan
- Using the back of a spoon or your hands, press the mixture into the pan until it is even and compact
- Place the pan in the refrigerator for 1-2 hours to allow the mixture to set
- (Optional) Cut out 18-20 heart shapes from the mixture using a heart-shaped cookie cutter OR cut into 12-16 squares
- In the microwave or over a bain-marie, melt the white chocolate chips over low heat and add a few drops of pink food coloring to achieve the desired color
- Drizzle the melted white chocolate over the Rice Crispie treats and let it set for 10 minutes in the fridge
