PB Crunch Date Bark ✨

- 300g medjool dates (pitted!!)
- 60g smooth peanut butter- I use @picspeanutbutter
- 30g soy protein crisps
- 60g sf milk chocolate- I use @lindt_au
- 1/2 tsp coconut oil
- Flaky sea salt for topping

1. flatten Medjool dates on a lined pan or chopping board
2. Top with peanut butter + protein crisps
3. Melt chocolate + coconut oil in the microwave (30 sec intervals) or over a Bain Marie and pour on top. Top with flaky sea salt
4. Freeze until set & cut into little pieces and enjoy
*store in the freezer 🥰

High Protein Chilli Chicken Crispy Rice Salad (ser

High Protein Chilli Chicken Crispy Rice Salad (serves 4):
*Recipe from @noaawilliams

Crispy Rice:
- 250g cooked rice - I use 2x 125g cup rice
- chilli paste
- 1-2 tsp low sodium soy sauce
- heaped tsp sesame oil

1. mix rice with chilli paste, soy sauce and sesame oil, then add to a baking tray
2. Bake rice at 180c for about 35-40 minutes, making sure to mix it a few times to ensure even crispiness.

Salad:
- 2x Lebanese cucumbers, thinly sliced
- 200g edamame
- 1x avocado, cubed
- green onion
- 300g chicken tenders (cooked per packet instructions) - I use @froproaus and cooked in the airfryer at 190c for 12 mins
- sesame seeds for serving
- crispy rice

Dressing:
- 100g greek yogurt
- 65g perinaise (or mayo)
- 20g sirracha (about a heaped tbsp)
- 50g sweet chilli sauce (about 2-3 tbsp)
- 1 tbsp rice wine vinegar or white vinegar

Macros per serve (4):

2 minute microwave protein pancake bowls I AM OBSESSED 🥰

This recipe uses my viral Protein Pancake Recipe that has been my go-to for years and I will never stop RAVING about it Its the best protein pancake recipe everrrr (im biased but idc) 😜🤝

My protein Pancake recipe is linked in my bio 🫶

Just mix it up in a microwave safe bowl and microwave for about 2 minutes (check on it at 1 min 30 secs). The middle should be slightly wet (you do not want to over-do it). If it is too raw in the middle microwave for an extra 30 seconds.

Top with whatever you like, I like to add sf choc chips, yogurt and sf maple syrup!

Dubai Chocolate Layer:
20 g light butter
130 g Kataifi Pastry
120 g pistachio paste/cream/spread
20 g tahini

Brownie Base
70 g sugar free milk chocolate
100 ml high protein, low fat milk
160 g Vanilla Yogurt (1 tub)- I use @paulsplusprotein
1 egg
50 g sweetener- I use a mix of natvia and monkfruit
80 g flour
30 g cocoa
1/4 tsp baking soda
1/8tsp salt
1/2 tsp vanilla

Topping:
10 g sugar free milk chocolate
10 g Pistachio paste/cream/spread

1. Melt butter and brown shredded kataifi pastry until coated and golden (takes about 5-8 mins).
2. Add in the pistachio paste and tahini and mix well. Add to a lined brownie pan and press mixture into a flat, even layer. Freeze for at least 1 hour or until firm.
3. Pre-heat oven until 180c
4. Beat/whisk eggs and sweetener until slightly pale
5. Melt the choc and add in the milk and pauls plus protein vanilla yogurt and mix well. Add this mixture into the egg mixture.
6. Mix in vanilla, baking soda, flour, cocoa powder and salt until just combined.
7. Spread half the brownie batter into a lined baking tin, place the frozen Dubai chocolate layer on top and cover with remaining brownie batter.
8. Add extra pistachio paste and chopped chocolate on top.
9. Bake for 18-20 minutes, then let it cool completely before slicing into 16 even slices and enjoy.

Strawberries & cream chia mousse (serves 4):
- 150g strawberries- chopped
- 2 tbsp sweetener- I use @natvialiving
- 1 tsp vanilla
- 150ml milk- I use light
- 300g vanilla yogurt
- 40g protein powder - I use @macr0mike strawberry thick shake (dc amb-eliyaeats)
- 80g chia seeds (4 heaped tbsp)
- Extra yogurt for topping

1. Add the chopped strawberries and sweetener and mix. Let it sit for 5 minutes to release liquid.
2. Add vanilla, milk, yogurt and protein powder and mix well. Blend in a blender or with an immersion blender till smooth.
3. Add chia seeds, mix well and let it set for 3-5 hours minimum.
4. Top with extra yogurt and enjoy!

Peanut Crispy Rice Salad 🥗💚

Crispy Rice:
- 3/4 cup rice- 130g dry basmati rice
- chilli paste
- 1-2 tsp low sodium soy sauce
- heaped tsp sesame oil

1. Cook rice and make sure it is cooled before mixing with chilli paste, soy sauce and sesame oil. Mix well then add to a baking tray
2. Bake rice at 180c for about 40 minutes, making sure to mix it a few times to ensure even crispiness.

Salad:
- about 1 cup shredded purple cabbage (about 1/2 head)
- 3 large carrots shredded
- 2-3 Lebanese cucumbers
- 150g edamame (about 1 cup)
- green onion
- 1/2 red onion
-3-4 raddish
- 20g crushed peanuts
- 450g cooked prawns (just cooked with a soy, lemon and chilli flakes)

Dressing:
- about 1/2 cup runny pb (about 65g)
- 20g powdered pb (I use @macr0mike , dc: amb-eliyaeats)- just replace with peanut butter
- 2 tbsp low sodium soy sauce (or tamari, coconut aminos)
- 2 tbsp rice wine vinegar
- 1 tbsp sriracha
- 1-2 tbsp honey (about 30g)
- crushed ginger & garlic
- chilli flakes (to taste)
- 1/2 lemon or lime (juiced)
- hot water to thin

Serves 4-6:

Satay Chicken Vermicelli Bowls 🫶 - 4 Large chicke

Satay Chicken Vermicelli Bowls 🫶

- 4 Large chicken thighs (or 6 smaller) - 600g raw
- 2 tbsp/ 40g light coconut milk
- 2 tsp minced garlic & ginger
- 1 tsp chicken stock paste/powder (optional)
- 2 tsp low sodium soy sauce
- 1 tbsp sugar free sweet chilli sauce (optional)

1. Marinate chicken for at least 1 hour
2. Airfry at 190c for 20-22 minutes flipping halfway OR pan fry till cooked through (about 5-7 mins per side)

Satay Sauce to serve:
3 tbsp coconut milk - 60g
1 tbsp Powdered PB (12g)- Optional, replace with peanut butter. I use my go to @macr0mike powdered pb (dc amb-eliyaeats)
1 heaped tbsp peanut butter - 20g
1/2 tbsp low sodium soy sauce
1/2 tbsp rice wine or 1/2 lime juiced
1/2 tbsp zero calorie sweetener
1 tsp minced garlic
1-2 tsp chilli paste or sriracha
1/2 tsp satay seasoning
1-2 tbsp boiling water to thin

Noodle Bowl:
160g dried vermicelli/bean thread noodles- 40g per bowl
1-2 carrots, julienned or thinly shredded
1-2 cucumbers - julienned
Iceberg lettuce
20g crushed peanuts (5g per bowl)
Green onion to serve
Lime wedge to serve

1. Prep vericelli noodles by soaking in hot water for 5 minutes (or per packet instructions), then drain and rinse under cold water and let it rinse well
2. Place equal portions of noodles in each bowl, top with veggies, and 1 sliced chicken thigh per bowl. Top with crushed peanuts, and green onion. Serve with 2-3 tbsp of the satay sauce. I like to keep the sauce seperate but you can add it straight into the bowl

To serve:
Can eat cold OR can heat up in microwave for 30 secs- 1 minute to loosen up the noodles (does not affect veggies)

Sticky Date Chia Seed Pudding, my go to breakfast

Sticky Date Chia Seed Pudding, my go to breakfast atm 😩🤌🏻 no protein powder with 24g protein & 11g fibre ✨

Recipe (makes 4 serves):
- 80g Medjool dates
- 400g yogurt - I use vanilla or salted caramel from @yoproau
- 200g plain kefir (completely optional!!! Can sub for any milk) - I just love the tanginess and gut health benefits of kefir
- Dash of salt
- 4 heaped tbsp chia seeds (80g) - 1 tbsp per bowl

Topping:
-200g yogurt (divided onto each serve)
Toffee sauce:
- 70g almond butter
- 30g honey or maple syrup
- 1-2 tbsp milk (I use soy)
- Microwave for 30 seconds

1. Soak medjool dates for 5 mins in hot water, drain majority of the water (I like to leave some in the mix)
2. Blend with yogurt, kefir and salt
3. Evenly divide into 4 bowls
4. Add 1 heaped tbsp chia seeds into each bowl, mix and refrigerate for 1-2 hours minimum, I like overnight
5. Top with 50g yogurt per bowl, and evenly divide the “toffee” sauce on top
6. Sprinkle with a dash of salt and keep refrigerated for 4-5 days

Choc Chia Mousse 🍫✨ (makes 3-4 serves):

- 40g dark choc
- 200g vanilla yogurt
- 200g kefir- I use a high protein vanilla flavoured one, I love kefir for the gut health benefits but this can be replaced with yogurt and about 1/3 cup milk
- 1 tbsp cocoa powder
- 1-3 tbsp maple syrup- I use sugar free - add more if you like it sweeter
- 80g chia seeds- about 4 heaped tbsp
- 1 tsp vanilla

1. Melt dark choc and add the yogurt and kefir, I like to immersion blend this mix to make it extra smooth (as the choc may harden when the yogurt is added)- OR you can melt the dark chocolate over a bain-marie and add the yogurt and kefir bit by bit to get it extra smooth
2. Add the rest of the ingredients and mix until well combined
3. Set in the fridge for 3-4 hours or preferably overnight and enjoy

I like to serve with a drizzle of honey and raspberries
This chia mousse is great for breakfast or for dessert 10/10 would recommend
*you could also add protein powder to add extra protein, just add extra milk or yogurt

Diner Kebab HSP

Recipe (serves 2):

Doner - inspired by @mezemike
- 1/2 onion
- 250g lean beef mince
- 60g plain greek yogurt
- 1 tsp olive oil
- 1 tsp mined garlic
- 1/2 tsp chicken stock paste or powder (optional)
- 1 tsp chilli paste (optional)
- Handful of parsley (optional)
- seasonings: salt, pepper, 1 tsp paprika, 1/2 tsp Lebanese 7 spice

1. Add ½ onion, yogurt, garlic, olive oil, chicken stock paste, chilli and parsley to a food processor and blitz until finely minced.
2. Add the beef mince and seasonings (salt, pepper, paprika, Lebanese 7 spice) and process or mix until the mixture becomes smooth, sticky and paste-like
3. Spread a thin layer of the mince on parchment paper and spread it thin, can use hands or add another piece of parchment on top and use a rolling pin to spread it thin but tbh I found this to be a bit too messy lol.
4. Roll it up (refer to video)- and repeat until the meat mixture is used up. Pop in the airfryer and airfry at 200c for 12-15 minutes.

Fries:
- 500g white potato
- 1/2 tsp olive oil or olive oil spray
- Peri Peri seasoning

1. Peel and cut potatoes into medium-thick fries (1.2–1.5 cm).
2. Bring a pot of water to a boil. Add the fries and 1/4 tsp baking soda. Parboil for 4-5 minutes.
3. Drain and allow the fries to steam dry for 3–5 minutes in the pot (this removes moisture so they stay crispy).
4. Toss with ½ tsp olive oil or a few sprays of olive oil, and peri peri seasoning (skip salt until the end).
5. Airfry at 200c for 16-20 minutes, shaking twice during cooking.
6. Lay fries in a single layer (don’t overcrowd).
7. Airfry for 16–20 minutes, shaking twice during cooking.

Extra:
- 2x light cheese slices- I use bega
- 30g perinaise (15g per plate)
- low sugar bbq sauce

1. Assemble plate - divide fries between two plates, add light cheese slices on top so they melt into the hot fries then your sliced doner meat over the top.
2. Drizzle with: Perinaise (15g per plate) & Low sugar BBQ sauce
3. Serve with chopped tomatoes and pickles on the side

Recipe (makes 12 protein balls):
250g pitted dates soaked in hot water for 5-10 mins (reserve 2 tbsp)
60g chocolate protein powder- I use @macr0mike deluxe chocolate protein (amb-eliyaeats to save $$$)
2 tbsp cocoa powder (around 20g)
30g runy peanut butter
1/2 tbsp date water (add more as you go if too dry)
Salt

Chocolate Coating

80g sugar free milk chocolate- I use @lindt_au
1-tsp coconut oil
30 g protein crispies (optional but recommended!!)

- Add soaked dates, protein powder, occoa powder, peanut butter, salt and 1/2 tbsp date water into a food processor or blender and blend until a thick sticky mixture forms.
- Roll into 12 balls and freeze for 20 mins
- Melt your choc with 1 tsp coconut oil, add the protein crispies and mix well.
- Dip each protein ball into the chocolate mixture, sprinkle with some sea salt and freeze for 1 hours or until fully set. Store in the fridge for a softer texture or in the freezer for a firmer texture & enjoyyyy

10/12 Plates of Christmas: Mini Focaccia Loaves ✨

Recipe (makes 6 mini loaves):

I used @_lacebakes_ same day focaccia recipe:

500g (4 cups) bread flour
390-420ml (1 3/4 cups) warm water- I used 400ml!
15ml (1 Tablespoon) extra virgin olive oil
6g (1.5 teaspoons) instant yeast
5g (1 teaspoon) honey (or sugar)
10g (2 teaspoons) fine sea salt
Extra virgin olive oil to line pan and drizzle
Flaky sea salt to finish
Toppings of choice (rosemary, olives, brie, tomato, cranberry etc)

Method:
▫️Whisk together warm water, olive oil, honey and yeast. Stir in bread flour and salt. Cover and rest at room temp for 15 minutes.
▫️Stretch + fold the dough around 8 times around the bowl. Cover and rest at room temp for 15 minutes.
▫️Repeat the the stretch + folds once more, cover and proof at room temp for 1 hour.
▫️Coat your mini pans with some olive oil and divide the dough into 6 equal portions.
▫️transfer each piece of dough to a tray. Cover and proof at room temperature for 1 hour.
▫️preheat oven to 220C/430F, place oven rack in lowest position.
▫️Bake for 18-20 minutes and enjoy

Recipe:
- Chopped Mixed fruit- I use strawberries, raspberries and passionfruit
- 1 cup milk- I use rokeby light milk
- 1 tbsp yogurt
- 30g vanilla protein powder
- 20g meringue kisses (save half for the mix in)

- mix all ingredients in the ninja Creami pint, freeze for minimum 8 hours.
- spin on light Icecream 2x then add the mix ins (extra fruit, passionfruit and meringue kisses) and press the mix in button and enjoy 🫶

- lollies of choice- I use @fundaysweets frogs & @doubled_sweets Berry bears
- 50g marshmallows - I use mini
- 75g whey protein puffs (sub for any biscuit or puff)
- optional: Christmas sprinkles
- moulds of choice- I use 2 x love heart moulds (made 20 single serve Rocky road pieces)
