High Protein Potato Quiche - 420 cals & 41g protein (makes 3 serves):

Recipe:
- 500g spud light potatoes (or white potatoes), peeled, chopped and boiled until tender (around 20 mins)
- 250g lean beef mince- cooked in a pan with seasonings of choice- I loveeeee @mingleseasoning chilli umami seasoning
- 6 x eggs (2 per bowl)
- 150g cottage cheese
- 90ml milk
- Veggies of choice- I use cherry tomatoes, red onion and baby spinach
- Seasonings of choice- I use @mingleseasoning chilli umami seasoning

1. Pre-heat oven to 190c
2. Boil the potatoes & cook the mince
3. Divide the boiled potatoes evenly to each oven safe glass bowl and smash down until a crust forms
4. Add the eggs and evenly distribute the rest of the ingredients, mix well
5. Bake for 25-30 minutes and enjoyyyy

Fakeaway Fridays Ep 16: Doner Kebab HSP

Recipe (serves 2):

Doner - inspired by @mezemike
- 1/2 onion
- 250g lean beef mince
- 60g plain greek yogurt
- 1 tsp olive oil
- 1 tsp mined garlic
- 1/2 tsp chicken stock paste or powder (optional)
- 1 tsp chilli paste (optional)
- Handful of parsley (optional)
- seasonings: salt, pepper, 1 tsp paprika, 1/2 tsp Lebanese 7 spice

1. Add ½ onion, yogurt, garlic, olive oil, chicken stock paste, chilli and parsley to a food processor and blitz until finely minced.
2. Add the beef mince and seasonings (salt, pepper, paprika, Lebanese 7 spice) and process or mix until the mixture becomes smooth, sticky and paste-like
3. Spread a thin layer of the mince on parchment paper and spread it thin, can use hands or add another piece of parchment on top and use a rolling pin to spread it thin but tbh I found this to be a bit too messy lol.
4. Roll it up (refer to video)- and repeat until the meat mixture is used up. Pop in the airfryer and airfry at 200c for 12-15 minutes.

Fries:
- 500g white potato
- 1/2 tsp olive oil or olive oil spray
- Peri Peri seasoning

1. Peel and cut potatoes into medium-thick fries (1.2–1.5 cm).
2. Bring a pot of water to a boil. Add the fries and 1/4 tsp baking soda. Parboil for 4-5 minutes.
3. Drain and allow the fries to steam dry for 3–5 minutes in the pot (this removes moisture so they stay crispy).
4. Toss with ½ tsp olive oil or a few sprays of olive oil, and peri peri seasoning (skip salt until the end).
5. Airfry at 200c for 16-20 minutes, shaking twice during cooking.
6. Lay fries in a single layer (don’t overcrowd).
7. Airfry for 16–20 minutes, shaking twice during cooking.

Extra:
- 2x light cheese slices- I use bega
- 30g perinaise (15g per plate)
- low sugar bbq sauce

1. Assemble plate - divide fries between two plates, add light cheese slices on top so they melt into the hot fries then your sliced doner meat over the top.
2. Drizzle with: Perinaise (15g per plate) & Low sugar BBQ sauce
3. Serve with chopped tomatoes and pickles on the side

Macros per serve (2 serves):

Carbs: 57g
Fat: 20g

Dubai Chocolate Yogurt Brownies with @paulspluspro

Dubai Chocolate Yogurt Brownies with @paulsplusprotein (makes 16):

Dubai Chocolate Layer:
20 g light butter
130 g Kataifi Pastry
120 g pistachio paste/cream/spread
20 g tahini

Brownie Base
70 g sugar free milk chocolate
100 ml high protein, low fat milk
160 g @paulsplusProtein Vanilla Yogurt (1 tub)
1 egg
50 g sweetener- I use a mix of natvia and monkfruit
80 g flour
30 g cocoa
1/4 tsp baking soda
1/8tsp salt
1/2 tsp vanilla

Topping:
10 g sugar free milk chocolate
10 g Pistachio paste/cream/spread

1. Melt butter and brown shredded kataifi pastry until coated and golden (takes about 5-8 mins).
2. Add in the pistachio paste and tahini and mix well. Add to a lined brownie pan and press mixture into a flat, even layer. Freeze for at least 1 hour or until firm.
3. Pre-heat oven until 180c
4. Beat/whisk eggs and sweetener until slightly pale
5. Melt the choc and add in the milk and pauls plus protein vanilla yogurt and mix well. Add this mixture into the egg mixture.
6. Mix in vanilla, baking soda, flour, cocoa powder and salt until just combined.
7. Spread half the brownie batter into a lined baking tin, place the frozen Dubai chocolate layer on top and cover with remaining brownie batter.
8. Add extra pistachio paste and chopped chocolate on top.
9. Bake for 18-20 minutes, then let it cool completely before slicing into 16 even slices and enjoy.

Here’s everything I prepped in a week to stay on track and hit my protein goals *Sweet Tooth Edition* with @paulsplusprotein !

Blueberry Bagels (makes 4):

210 g bread flour
1 tsp baking powder
sprinkle of salt
80 g of fresh blueberries
1x 160 g cup of @paulsplusprotein Blueberry Yogurt
Egg wash for brushing

Mix ingredients until a dough forms, add a sprinkle of water if too dry
Divide into 4 equal balls and form into bagels
Brush with egg wash and airfry at 180c for 12 mins

225 cals - 41 g carbs - 12 g protein - 1 g fat Per Bagel

Banoffee Yogurt Pots (makes 4)

4x @paulsplusprotein Banoffee Flavoured Yogurt 150 g pouches
1 x large banana cut into coins
35 g runny peanut butter
50 ml sugar-free maple syrup (or normal)
Sprinkle of salt
Sprinkle of dark choc shavings (optional)

Mix peanut butter, sugar-free maple syrup, hot water and a sprinkle of salt to make a quick caramel
Layer banoffee flavoured yogurt, banana coins, “caramel” and repeat
Top with dark choc shavings

190 cals- 16 g carbs - 18 g protein- 5 g fat per serve

Fakeaway Fridays ep 15: Beef Pad See Ew

Recipe (serves 2):
Tenderised and Marinated Beef:
- 200-250g raw flank steak or rump steak, thinly sliced
- 1/4 tsp baking soda
- 1/2 tbsp low sodium soy sauce
- 1 tsp sweetener- I use natvia
- 1/2 tsp sesame oil
- minced garlic
- minced chilli (optional)

Sauce:
- 1 tbs sweetener - l use @natvialiving
- 1.5 tbs low sodium soy sauce
- 1 tbs dark soy
- 2 tbs oyster sauce
- 1 tsp white vinegar or rice wine vinegar

Stirfry:
- 1 tsp oil (I use sesame)
- Veggies of choice chopped- I use Chinese broccoli + carrot + onion
- 1-2 clove garlic
- 300g fresh rice noodles chopped into thick slices & separated (I buy these from the Chinese grocer but you can sub for normal pantry rice noodles but they will be much thinner)- I use the Cong Thanh Hu Tieu Sai Gon Stir Fry Noodles 1kg from woolworths
- 2x egg

Garnish:
- birds eye chilli roughly chopped + white vinegar
- Green Onion
- Lemon or lime wedges

1. Thinly slice beef and marinate + set aside to tenderise (this is key to get tender beef)
2. Prep all veggies, sauce etc
3. Pan-fry beef until 80% cooked, set aside
4. Saute garlic, carrot and onion, then add chopped Chinese broccoli
5. Make a well in the middle of the pan, add 2x eggs and scramble
6. Add the cooked beef back into the pan, along with the fresh rice noodles or prepared cooked thin rice noodles) & cook for 1-2 mins. Add the sauce and make sure everything is coated well.
7. Garnish with some chopped chilli in vinegar and green onion and enjoy ✨

Rice Paper Biscoff Apple Pies 🤝

Recipe (makes 4):
Apple Pie Filling:
3x medium sized apples, diced
1-2 tbs zero calorie sugar alternative- I use golden natvia
Cinnamon & nutmeg to taste
30g biscoff spread
50ml water
1 tsp cornstarch

- 8x rice paper sheets
- 2x eggs + 2 tbsp milk or water
- cinnamon sugar for topping (I make my own by blending cinnamon and natvia to keep it sugar free)
- Oil spray

1. Prepare apple pie filling by peeling and dicing the apple
2.To a pan over medium heat, add diced apples, brown sugar alternative, cinnamon and nutmeg and cook for 4-5 mins
3. Add the biscoff spread and then mix the water and corn starch and add to the cooked apples, cook for another 1-2 mins until thickened. Set the apple pie filling aside to cool down
4. Mix the egg, milk or water and some cinnamon sugar well
5. Dip 2 rice paper sheets into the mix and lay them down on top of each other (refer to video)
6. Fill with some of the apple pie filling and roll into a burrito sort of shape (refer to video) making sure the sides are tucked in. Repeat this until you make 4 apple pies and spray with oil spray and sprinkle with some extra cinnamon sugar (optional)
7. Airfry at 200c for 15 mins OR bake at 200c for 30 minutes, flipping halfway at around 20 minutes (I prefer airfrying)

Calories: 247
Carbohydrates: 41g
Protein: 4g
Fat: 6g
