Fluffy hot cross cinnamon donuts 🍩

Recipe:
- 70g flour of choice-
- 30g MacroMike hot cross bun protein powder - you can use any but I swear this flavour works so well 🤌🏼🙌 - use my code AMB-eliyaeats for $$$ off
- 40g sweetener of choice - I use @natvialiving
- 4g/1 tsp cornstarch
- 4g/1 tsp baking powder
- 1g / 1/4 tsp baking soda
- 2g/ 1 tsp cinnamon
- 40g sultanas
- 1 tsp vanilla
- 30g melted light butter - I use nuttelex
- 50g yogurt - I use @yoproau vanilla (can sub for apple sauce or vegan yogurt)
- 100-120ml almond milk

*you can sub flour for oat flour

Method:
- mix wet ingredients then sift through dry ingredients till a nice thick batter forms (if too thick add tbs extra liquid)
- Spray your silicone mould with a bit of oil spray and pour batter evenly (mine filled 8 donuts so I used 2 silicone donut moulds)
- Bake @ 180 degrees Celsius for 15-20 mins (keep an eye on them to make sure they don’t over cook)
- Dip into cinnamon sugar mixture while still warm (or alternatively coat in a light layer of warm almond mix before dipping into the cinnamon sugar) I mix natvia living with cinnamon so it’s sugar free & way lower cal

Hot cross bun icing:
- I use about 2 tbs of monkfruit icing sugar, a tbs of yogurt & splash of almond milk then pipe the crosses on

& enjoy

Single Serve Chilli prawn noodles 🍲🌶

365 calories, 32g protein & done in under 15 mins 🙌

Recipe:
- 5g light butter (or oil)
- 1/2 garlic clove
- white part of green onion (1/2 stalk & reserve the green part for garnish/topping)
- 1 tsp chilli flakes (adjust to your liking)
- 1 tbs low sodium soy
- 1/2 tsp sugar or sweetener- I use @natvialiving
- serve of noodles - I use 62.5g dried thin noodles
- 130g cooked & peeled prawns (can pre make or buy)

Start by cooking your noodles as per instructions on the packaging (reserve 1-2 tbs water)

- chop up your white scallion & garlic
- fry white scallion with butter on low-medium heat
- once lightly browned add chilli flakes
- sauté for 1-2 mins before adding garlic & sautéing for an extra 1 min
- add soy sauce, noodle water, and sweetener & let thicken
- once thickened, add noodles and cooked prawns & stir till evenly coated
- Top with green onion & a sprinkle of sesame seeds

So so good. That is all 💪🏻🙌

**feel free to add some veggies to this, I was just craving 2 min noodles and decided to whip this up 😍

Birthday Cake Overnight Oats 🎂

Recipe:

Oat layer:
-40g oats
-25g vanilla protein - I use @macr0mike vanilla buttercream - use my code amb-eliyaeats
-1/2 tbs / 10g sweetener
-100-120ml almond milk (add more or less if needed- make sure the almond milk sits right on top of your oats & is properly mixed so it becomes thick overnight)
- 5g sprinkles/100’s & 1000’s

Mix your ingredients together and place in your bowl

Refrigerate overnight

To serve layer oats with 80 yogurt - I use @yoproau vanilla yogurt mixed with some sweetener & pink food colouring

Top with 5g sprinkles/100’s & 1000’s & enjoy

My take on a Healthier Vegetarian pad Thai 💕 (p.s not authentic so pls don’t come for me 🤣)

Recipe (serves 2-3);

Pad Thai Sauce:
- 2 tbs fish sauce
- 2 tbs sweetener of choice (natvia, stevia, brown sugar etc)
- 1.5 tbs oyster sauce
- 2 tbs tomato paste (tamarind paste would be the preferred option)
- 0.5 tbs low sodium soy sauce

- 200g tofu
- 100g rice noodles
- 1 clove garlic
- 1/2 an onion
- Vegetables of choice- I use carrot, Chinese broccoli, bean sprouts & red capsicum (bell peppers)
- 1 egg
- 1 tsp oil

- prepare your sauce
- prepare rice noodles by adding to a bowl with boiling water and let sit for 10-15 mins (no need to boil on the stove)
- chop your tofu into chunks & fry on a non stick pan with 1/2 tsp oil of choice (I use sesame) & a dash of low sodium soy sauce
- add a whisked egg and cook with the tofu, then remove from the pan and set it aside
- add the rest of the oil & fry the garlic till lightly browned & fragrant
- add onion, carrots & bell peppers
- after a few minutes add the chopped Chinese broccoli
- add the tofu, egg, bean sprouts & the pad Thai sauce
- add the rice noodles & mix everything till well combined

Divide into 2 serves

Top with green onion & 10g of chopped roasted peanuts or cashews

Serve with lime wedges & enjoy ✨

Churro French Toast ✨ For only 300 cals I promise this will be your new fave breakfast 🤤🥵

Recipe:
- 1 egg or 60g egg whites
- dash of cinnamon
- 10g protein (opt)- I use @macr0mike vanilla buttercream protein (my fav!!!) discount code: AMB-ELIYAEATS
- 30ml almond milk
- 2 slices of low calorie bread - I use the ButterCup Country Split white bread (only 118 cals for 2 pieces)
- cinnamon sugar (I mix @natvialiving sweetener with cinnamon)
- 16g sf choc spread - I use @nuttvia

Make your French toast batter
Make sure to mix your protein powder with the almond milk first before adding to the egg (minimises clumping)
Dip your bread into the mixture and pan fry on each side till golden brown

Add some cinnamon sugar on top of each slice & melt down the choc spread with a splash of almond milk and drizzle on top!

Seriously one of my fave fancy breakfast’s I’ve made in a while! Super filling too!!

P.s you can use one more piece of bread and just add more almond milk, so you have 3 slices (this will make it 375 cals)

Lemon Blueberry Baked Oats 🫐🍋

Recipe:
- 40g oats
- 30g protein - I use @macr0mike Vanilla Buttercream Protein (🐐)- discount code amb-eliyaeats *can replace with oats*
- 15g sweetener (heaped TBS) - I use @natvialiving
- 1/2 tsp baking powder
- 40g yogurt (I use @yoproau vanilla), use a dairy free yogurt to make it vegan/plant based
- 80ml almond milk
- juice of 1/2 lemon (or 1/2 tsp lemon extract)
- lemon zest (to taste)
- 50g blueberries

Blend all ingredients minus the blueberries

Add the mixture to a ramekin

Top with your blueberries

Bake @ 190 for 20-25 mins or airfry @ 170 Celsius for 10-15 mins

Top with a yogurt drizzle (mix yogurt, lemon juice and sf maple syrup or sweetener) & extra lemon zest ✨

Healthier Subway Style Festive Cookies 🍪🎄🎅

Photos cannot depict how perfectly soft and chewy these are !! Reminds me of subway cookies 😍

Recipe:
- 50g light butter
- 45g natvia or sugar free granulated sweetener - @natvialiving
- 30g white sugar
- 1 tsp vanilla
- 1/2 egg
- 60g flour
- 25g protein powder or almond butter powder- I use @macr0mike mystery Christmas flavoured almond butter powder (dc amb-eliyaeats)
- 1/4 tsp baking soda
- 1/8 tsp salt
- 50g green & red mini MnMs

Lightly soften butter in microwave for 5-10 secs, add the sugars & vanilla
Whisk or use an electric hand mixer to cream for a couple of mins

Then add 1/2 a whisked egg and whisk well

Sift through baking soda, flour, protein powder/almond butter powder, salt and then add the MnMs (reserve some for the top) & mix till a cookie dough forms (will be quite sticky)

Scoop 10-11 cookies & bake @ 180 Celsius for 10 mins

Let rest for 15 mins before moving to a cooling rack to cool completely & enjoy 🎅

Recipe:

Oat layer:
-30g oats
-20g vanilla protein - I use @macr0mike vanilla buttercream - use my code amb-eliyaeats
- 1/2 tbs chia seeds (5g)
-1/2 tbs / 10g sweetener
-100-130ml almond milk (add more or less if needed- make sure the almond milk sits right on top of your oats & is properly mixed so it becomes thick overnight)

Mix your ingredients together and place in your bowl

Layer your oats with 50-60g yogurt - use @yoproau passionfruit yogurt
Add some passionfruit
Then add another layer of oats

Then layer with your white choc passionfruit ganache layer:

- 10g white choc melted
- 10g yogurt

Mix well layer on top and add passionfruit

Refrigerate overnight & the next morning I shave a lil bit of extra white choc (optional but makes it look pretty) & enjoy

One of my fave cookie recipes I’ve ever made 😍

Recipe:
- 40g light butter
- 10g yogurt - I use @yoproau
- 1 tsp vanilla extract
- 40g (about 2 heaped tbs) zero cal granulated sweetener - I use @natvialiving
- 15g white sugar
- 10g brown sugar (can use all white)
- 55g All purpose flour
- 20g protein - I use @macr0mike caramel cinnamon bun protein - discount code amb-eliyaeats *can replace with flour*
- 1/4 tsp baking soda
- 1/8 tsp salt
- dash of cinnamon

Pre-heat oven to 180 degrees celsius
Start by softening your butter in the microwave (10 secs max)
Cream your butter, yogurt, sugar & vanilla with a hand mixer till well combined (1-2 mins)
Then sift through your flour, protein, baking soda, cinnamon & salt & mix till a nice cookie dough forms (will be quite sticky).
No need to refrigerate this batter, although you can if you would like (will become firmer & won’t be as chewy)
Scoop out 8-9 cookies and roll into a cinnamon mixture:
- low calorie granulated sweetener- I use @natvialiving & cinnamon to taste (you can skip this step but I swear it makes them 🤌🏼🤌🏼🤌🏼)

Flatten slightly on your baking tray

Bake for 10 mins and then take out and let the cookies rest on the pan for about 15 mins (they will continue to cook and become delicioussss)

Macros (per cookie)- 8 serves:

Idk why I’ve been so obsessed with mint choc lately but it is sooo underrated !

If you’re a mint choc lover like me (only recently I must admit) you need to try this 🤌🏼

Recipe:
- 25g oats
- 15g @macr0mike mint hot chocolate ( alternatively you could use cocoa powder and peppermint extract)
- 1/2 tbs zero calorie granulated sweetener - I use @natvialiving
- 20g yogurt- I use @yoproau vanilla yogurt
- 40ml almond milk

Blend ingredients and add to a ramekin
Top with 8g mint chocolate of choice - I use well naturally no sugar added mint choc

Bake @190 degrees C for 15-20 mins OR airfry 160 degrees C for 10-15 mins (I prefer airfryer)

Alternatively you can microwave for 1-2 mins

Biscoff Cheesecake Overnight Oats 🙌 It’s been a long time since I’ve done a biscoff recipe & an overnight oats one 🥺

Such a satisfying and delicious breakky for only 350 cals & 20g of protein 😍❤️

Recipe:

Oat layer:
-40g oats
-20g vanilla protein - I use @macr0mike - use my code amb-eliyaeats
-1/2 tbs / 10g sweetener
-dash of cinnamon
-100-130ml almond milk (add more or less if needed- make sure the almond milk sits right on top of your oats & it’s properly mixed so it becomes thick overnight)

Mix your ingredients together and place in your bowl

Biscoff cheesecake layer:

- 10g biscoff
- 10g light cream cheese
-10g yogurt - I use @yoproau vanilla yogurt

Soften the biscoff & cream cheese choc for about 10 secs in the microwave
Add your yogurt and mix well till a nice thick ganache forms

Layer your oats & refrigerate overnight

The next day top with 1/2 a crushed biscoff biscuit & enjoy ✨

Haven’t shared a baked oats recipe in a while but this was *chefs kiss* … just try not to burn some of your marshmallows like me 🙈

Recipe:
- 40g oats
- 20g @macr0mike Vanilla Buttercream protein (I can’t stress this enough, this protein is 🤌🏼🤌🏼🤌🏼)- macromike discount code AMB-ELIYAEATS
- 1/2 tbs sweetener- I use @natvialiving )
- 1/2 tsp baking powder
- Dash of cinnamon
- 50g yogurt (I use @yoproau vanilla), use a dairy free yogurt to make it vegan/plant based
- 100ml almond milk
-choc of choice- I use @lindt_australia chocolate ball or you can use 10g choc of choice
- 10g mini marshmallows

Blend all ingredients minus the choc & marshmallows

Add 3/4 of the mixture to a ramekin

Add the choc in the middle & cover with the rest of the mixture

Top with the mini marshmallows

Bake @ 185 for 15-20 mins or airfry @ 160 Celsius for 10-15 mins

For extra effect I blowtorched my marshmallows to give it that typical s’mores/marshmallow campfire look (accidentally over burnt some so pls ignore that)

Part 3 of my healthier Halloween inspired desserts & treats

Recipe:

Choc mousse:
- 85g yogurt - I use @yoproau vanilla yogurt
- 15g sugar free choc- I use Lindt sugar free milk choc
- 2g cocoa powder (optional- just makes it darker) & a splash of sugar free maple

Melt your choc then add all the other ingredients & mix till nice and thick & well combined

Refrigerate for min 1 hour

Top with:
- 1/2 crushed Oreo biscuit
- 1/2 biscoff biscuit AKA gravestone (or any biscuit) & decorate to make it spooooky

& enjoy

Feel free to multiply recipe to make multiple serves

My attempt at scary spooky skeleton szn 🎃

New lil series on my acc: “Healthier Halloween inspired desserts/snacks”

First up we have my Single serve spider web choc cake 🎂

P.s - I tried to make it look appetising as possible but I promise it tastes 🔥

Recipe:

- 1 egg white
- 5g melted butter- I use light nuttelex
- 2 tbs almond milk
- 20g yogurt - I use @yoproau vanilla

Mix wet ingredients well then add your dry:

- 25g flour
- 5g cocoa powder
- 10g protein powder - I like using whey as it keeps it fluffy
- 15g sweetener - I use @natvialiving

Mix till a nice cake batter forms, add to a ramekin (make sure there is baking paper lining the bottom) - I use a small 10x10 ramekin

Bake @ 180 degrees Celsius for 15-20 mins

Let cake cool down completely before frosting

Frosting:
- 15g light cream cheese
- 15g yogurt - I use @yoproau vanilla
- 2.5g cocoa powder
- 10g sweetener - I use monkfruit icing sugar 🤌🏼
- black food colouring gel - optional but highly recommended

Hand mix till nice and combined/ stiff - I use a hand mixer

Chill for 10 mins before frosting the cake

Spider web effect:
- 2x pascall white marshmallows melted

Melt in microwave for 30 secs, let sit for about a min to cool down, then grab with your fingers (or wear gloves bc it gets super messy) and pull a part and create webs and wrap them around your cake

* this was my first time ever attempting this technique so I’m a noob haha but it was delicious

& enjoy

Caramilk Overnight Oats baby
Don’t be fooled - this bad boi is super balanced and full of great ingredients and protein + Caramilk bc balance 🙌🤌🏼

For 385 cals & 27g protein- I promise you it tastes better than the new Caramilk McFlurry I’m low key obsessed 🤩

Recipe:
Oat layer:
-35g oats
-25g vanilla protein - I use @macr0mike - use my code amv-eliyaeats
-1/2 tbs / 10g sweetener
-1/2 tbs / 7g chia seeds
-splash of Vanilla (optional)
-1 tbs/ 20g yogurt (optional)
-100-130ml almond milk (add more or less if needed- make sure the almond milk sits right on top of your oats & it’s properly mixed so it becomes thick overnight)

Mix your ingredients together and set aside in a container and let thicken and rest overnight or min 12 hours

Caramilk layer:

*I’d recommend doing this the day of serving (or you can assemble the night before- just might look a bit messy)

- 15g Caramilk choc
- 30g yogurt - I use @yoproau vanilla yogurt

Shred & reserve some Caramilk choc for topping ( a little sprinkle)
Melt the remaining choc for about 1 min in the microwave
Add your yogurt and mix well till a nice thick ganache forms

Layer your oats the next day & top with shredded Caramilk & enjoy ✨

Higher Protein Lower Cal Pb & J French Toast

440 cals & 25g protein for the whole plate 🤌🏼

Recipe:
- 4x slices low calorie bread (I use Buttercup country split white bread- 59 cals per slice 🙌)
- 15g Pb powder- I use @macr0mike original Pb powder- use my code amb-eliyaeats for $$$ off
- 1 tbs (23g) sugar free strawberry jam

French Toast Custard:
- 1 egg
- 3 tbs almond milk
- 1/2 tbs sweetener

Maple PB drizzle:
- 5g pb powder
- Sf maple syrup
- Splash of hot water
Mix your Pb powder & hot water till a nice thick Pb paste forms
Add it to one side of your bread & add your jam on the other and form a sandwhich & repeat for the other 2 slices 🤌🏼

Mix your French toast custard ingredients till nice and frothy, dip your individual sandwiches into the egg mixture (5 secs on each side) and fry on medium heat till nice in golden

Cut into 4 triangles (bc elite) and top with a dusting of monk fruit icing sugar, raspberries (I used frozen) and a maple pb drizzle

AND ENJOY THE WHOOOLE PLATE
