These Single Serving Fluffy Protein Pancakes are so easy to make and are packed with 31 grams of Protein! These fluffy protein pancakes taste like the real deal and require no banana and you only need 7 ingredients to make them.

- 1 egg
- 50 g yogurt vanilla or unflavoured
- 70 ml soy or almond milk or any milk of choice
- 35 g flour
- 25 g protein powder vanilla or white chocolate works so well
- 5 g zero calorie sweetener or sweetener of choice (1 TSP)
- 1/2 tsp baking powder
Mix the wet ingredients until well combined (can use an electric mixer)
Sift through the dry ingredients and mix until well combined
Let batter sit for 5 minutes to thicken
Lightly grease a non-stick pan with some cooking spray on low-medium heat
Scoop 1/4 cup of the batter onto the pan and cook on low medium heat for about 2 mins then flip and cook for another 1-2 minutes
This recipe makes 4-5 medium sized pancakes which is equal to one serve
Serve with sugar free maple syrup, extra greek yogurt or fruit of choice
