Method
- Preheat the oven to 180°C (350°F).
- In a medium bowl, mash the ripe bananas and mix with melted butter, yogurt, egg, milk, sweetener and vanilla extract until well combined.
- Sift through the flour, protein powder, baking powder, baking soda, cinnamon, and nutmeg and mix with a spatula until just combined.
- Chop the strawberries and mix with a tsp of flour, add into the batter along with the white chocolate chips (also dusted in flour) and fold into the batter.
- Pour the batter into a lined loaf pan, then top with the jam and swirl into the batter. Add some extra chopped strawberries on top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
- Let the bread cool completely in the pan before slicing into 10-12 pieces.
