Rice Paper Spanakopita (High-Protein!)

A lighter, high-protein twist on the Greek classic. Crispy on the outside, creamy and cheesy inside, and ready in under 20 minutes. This is one of my favourite quick lunch ideas ever.

Ingredients
  

Rice Paper & Coating:
  • 3 rice paper sheets 33g
  • 1 egg
  • 1-2 tbsp water
  • Sesame seeds optional
Filling:
  • 25 g feta
  • 100 g cottage cheese
  • 1/2 cup chopped spinach
  • 1 stalk green onion finely chopped
  • Onion powder or omit
  • Salt & pepper to taste
  • A few teaspoons of the egg wash

Method
 

  1. Preheat airfryer or oven to 200°C.
  2. Mix all filling ingredients together and set aside.
  3. Beat the egg with water to create an egg wash.
  4. Dip each rice paper sheet into the egg wash, coating both sides.
  5. Overlap the rice paper sheets on a flat surface.
  6. Place filling on one side, fold in the edges, and roll tightly. Shape into a spiral.
  7. Spray lightly with oil and top with sesame seeds (optional).
  8. Airfry or bake for 15–20 minutes, or until golden and crispy.
