Rice Paper Sausage Rolls

If you love classic sausage rolls, you need this version. They’re high-protein, filled with veggies, and wrapped in crunchy rice paper for a lighter but still satisfying bite. Great for meal prep!

Ingredients
  

Filling:
  • 500 g lean beef mince
  • 1/2 cup finely chopped baby spinach
  • 1 large carrot grated
  • 1 large zucchini grated and squeezed dry
  • 1/4 large onion diced
  • 1-2 tsp minced garlic
  • 4 tbsp tomato paste
  • 1 tbsp soy sauce / tamari / Worcestershire sauce
  • Seasonings of choice e.g., Mingle Chilli Umami
  • Salt & pepper to taste
Rice Paper & Coating:
  • 10 rice paper sheets 2 per roll
  • 2 eggs
  • 1/4 cup water
  • Oil spray
  • Sesame seeds optional

Method
 

  1. Preheat oven to 200°C.
  2. Mix all filling ingredients together.
  3. Beat eggs with water, salt, and pepper.
  4. Dip 2 rice paper sheets into the egg mixture and overlap them.
  5. Add filling and roll tightly, tucking in the sides. Repeat to make 5 rolls.
  6. Place on a lined baking tray. Spray lightly with oil and sprinkle with sesame seeds.
  7. Bake 20 minutes, flip, then bake another 10–15 minutes until golden.
Storage:
  1. Keep in the fridge up to 5 days. Reheat in microwave or airfryer.
