Rice Paper Custard Apple Pies

Warm apples, cinnamon, AND creamy vanilla protein custard all wrapped in golden rice paper. These taste like a bakery dessert but are secretly high-protein.

Ingredients
  

Apple Filling:
  • 3 medium apples peeled & diced
  • 5 g light butter optional
  • 1-2 tbsp zero-calorie sugar alternative golden Natvia
  • Cinnamon & nutmeg to taste
  • Juice of 1/2 lemon
  • 50 ml water
  • 1 tsp cornstarch
Custard & Wrapping:
  • 10 rice paper sheets
  • 2 eggs
  • 2 tbsp milk or water
  • 2 Pots Pauls Plus Protein Vanilla Puddings or any protein custard
  • Cinnamon sugar Natvia + cinnamon
  • Oil spray

Method
 

  1. Cook apples with butter, sweetener, lemon, cinnamon, and nutmeg for 4–5 minutes.
  2. Add cornstarch mixed with water and cook 1–2 minutes until thickened. Cool completely.
  3. Mix eggs with milk/water and cinnamon sugar.
  4. Dip 2 rice paper sheets into the mixture and stack them.
  5. Fill with protein custard + apple mixture. Roll like a burrito, tucking in sides.
  6. Repeat to make 5 pies. Spray with oil and sprinkle cinnamon sugar.
  7. Airfry at 200°C for 20 minutes OR bake at 200°C for 30–35 minutes, flipping at 20 minutes.
