Rice Paper Biscoff Apple Pies

The ultimate dessert. Soft cinnamon apples + melted Biscoff inside a crispy rice paper shell.. this one is absolutely addictive. Consider yourself warned.

Ingredients
  

Apple Filling:
  • 3 medium apples peeled & diced
  • 1 tbsp zero-calorie sugar alternative golden Natvia
  • Cinnamon & nutmeg to taste
  • 30 g Biscoff spread
  • 50 ml water
  • 1 tsp cornstarch
Wrapping:
  • 8 rice paper sheets
  • 2 eggs
  • 2 tbsp milk or water
  • Cinnamon sugar Natvia + cinnamon
  • Oil spray

Method
 

  1. Cook apples, sweetener, cinnamon, and nutmeg for 4–5 minutes.
  2. Add Biscoff and mix until melted.
  3. Add water + cornstarch mixture and cook 1–2 minutes until thickened. Cool completely.
  4. Mix eggs with milk/water and cinnamon sugar.
  5. Dip 2 rice paper sheets into the mixture and stack them.
  6. Fill with apple mixture and roll tightly, tucking in the sides.
  7. Repeat to make 4 pies. Spray with oil and sprinkle cinnamon sugar.
  8. Airfry at 200°C for 15 minutes OR bake at 200°C for 30 minutes, flipping halfway.
