Raspberry White Chocolate Overnight Oats

Ingredients
  

Oat layer

  • 30 g rolled oats
  • 20 g white chocolate protein or vanilla
  • 5 g zero calorie sweetener about 1 tsp, optional
  • 20 g raspberries small handful, fresh or frozen
  • 80 ml soy milk or any milk of choice

White Chocolate Creme Layer

  • 80 g yogurt
  • 10 g white chocolate protein or vanilla
  • 10 g raspberries small handful

White Chocolate ganache

  • 10 g white chocolate
  • 25 g yogurt
  • 5 g raspberries mashed

Instructions
 

  • Mix oats, protein powder, sweetener (optional), raspberries and soy milk and add to a ramekin, bowl or jar of choice- place in freezer while preparing white chocolate creme
  • Mix yogurt and protein powder until no clumps remain
  • Spread on top of the oats and add some raspberries on top
  • Prepare the white chocolate ganache by melting the white chocolate in 30 second increments in the microwave until it's melted or over a bain-marie. Add yogurt and mix well until a smooth ganache is formed
  • Spread on top of the yogurt layer and swirl some mashed raspberries on top to make it look pretty
  • Refrigerate overnight or for a minimum of 5 hours and enjoy straight from the fridge
