Ingredients

Base

  • 100 g soy protein crispies Can replace with equal parts rice bubbles/puffs
  • 40-60 g chocolate protein powder vanilla or peanut butter will work too, can replace with extra protein crispies
  • 40 g Peanut Butter sub normal butter, or oil
  • 40 g Peanut Butter Powder Mixed with water to create a peanut butter like paste- can sub for equal parts peanut butter
  • 3 mini snickers bars 45g
  • 20 g sugar free milk chocolate normal, dark or protein chocolate works
  • 1 tsp milk any milk will work, soy milk was used in this recipe

Chocolate top

  • 80 g sugar free milk chocolate normal, dark or protein chocolate works
  • 1 tsp coconut oil

Instructions

  • In a large mixing bowl, combine the soy protein crispies and protein powder, ensuring they are evenly mixed.
  • In a microwave-safe bowl or over a bain-marie, melt the Snickers bars, chocolate and milk until smooth. Stir occasionally to achieve a homogeneous mixture.
  • Mix Peanut Butter and Peanut Butter Powder mixture together.
  • Pour the melted Snickers bar mixture and peanut butter mixture (reserve some for topping) into the bowl with the soy crispies and protein powder. Mix thoroughly until the ingredients are well combined, and a slightly sticky mixture forms. Adjust the consistency by adding more of the peanut mixture if it's too dry, or add additional crispies or protein powder if it's too wet.
  • Line a pan with parchment paper. Transfer the mixture into the lined pan and use a wet spoon to evenly spread it out, ensuring it covers the entire pan.
  • In a microwave-safe bowl or over a bain-marie, melt the chocolate and coconut oil until smooth. Stir occasionally to achieve a silky texture.
  • Pour the melted chocolate mixture over the protein crispies base, making sure it evenly coats the surface. Then swirl the rest of the peanut butter mix on top.
  • Place the pan in the refrigerator and chill for a minimum of 1 hour or until the slice is firm and set.
  • Once chilled, remove the pan from the refrigerator and cut the slice into 9-12 pieces.
Optional: Sprinkle a pinch of sea salt over the slices to add a touch of flavor.
