Healthy Soft Avocado Sandwich Bread

This super soft and fluffy sandwich bread recipe uses avocado in place of oil and butter to create a healthier and lower calorie sandwich bread loaf, without compromising on flavour or texture.

Ingredients
  

  • 400 grams flour
  • 4 grams sugar 1 tsp
  • 20 grams zero calorie natural sweetener or sugar/sweetener of choice
  • 6 grams instant yeast heaped tsp
  • 2 grams salt scant 1/2 tsp
  • 100 grams ripe avocado about 1/2 medium sized avocado
  • 200 mls plant milk or water
  • 50 mls boiling water

Method
 

  1. Start by mashing the avocado with boiling water, make sure to mix well and ensure no large clumps
  2. Mix dry ingredients in a bowl, make sure to add salt and yeast separately before mixing
  3. Microwave the plant milk or water for about 30 seconds or until slightly warm, then add to the bowl and mix slightly
  4. Add the avocado mash and mix until a sticky ball forms
  5. knead for 10-15 minutes by hand or with a stand mixer until a soft smooth dough forms or until the dough passes the windowpane test
  6. Cover in a bowl and let rise for 1 hour or until doubled in size
  7. Punch the air out of the dough and knead for 1-2 minutes to ensure no gases remain
  8. Shape into a loaf and add into your desired loaf pan
  9. Cover and allow to double in size which will take around 30-40 minutes
  10. Halfway through the second rise preheat oven to 190 degrees C or 375F
  11. Bake for 35-40 minutes
  12. Allow bread to cool in loaf pan for 15 minutes, then remove and let cool completely before slicing into 20 slices
