Healthy S'mores Brownies- Low Calorie & Super Fudgy
These Healthy S'mores Brownies are not only low calorie & super fudgy, but they also taste like the real deal! They have a fudgy brownie base filled with chunks of melted chocolate, then are topped with some sugar free mini marshmallows, extra chocolate chunks and some biscuit crumbles.

- 80 g all purpose flour
- 30 g cocoa powder
- 80 g natural zero calorie granulated sweetener can use any granulated sweetener
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 egg
- 160 g yogurt
- 1/2 tsp vanilla
- 80 ml almond milk or milk of choice
- 70 g sugar free milk chocolate 50g reserved for batter, 20g for the top
- 50 g sugar free mini marshmallows
- 1 biscoff biscuit crumbled, half for the batter, half to sprinkle on top
Preheat oven to 180c or 350f
Whisk the egg and granulated sweetener until doubled in size- can use a hand whisk or stand mixer etc (takes about 5 minutes)
Microwave the yogurt and almond milk for 30 seconds, add the vanilla and cocoa powder and mix well, let sit for a couple of minutes- this is not essential however it helps to bloom the cocoa powder which helps to intensify the chocolate flavor by releasing flavor that is trapped in the solid particles.
Add the yogurt cocoa powder mix to the whipped egg and whisk
Sift in the flour, baking soda and salt, and fold in chopped chocolate and biscuit crumbles
Once well combined, add the batter to a lined brownie pan
Bake at 180c or 350F for 15 minutes
Take out the brownie and top with mini marshmallows, extra chopped chocolate and the rest of the biscuit crumbles, put back into the oven for 3-5 minutes
Let the brownies cool down in the pan before cutting into 12 slices
