Easy Pistachio Protein Balls (10g protein per ball!)

These super easy Pistachio Protein Balls are made with just a few ingredients and pack 10g protein each! Despite being only 155 calories, they are super decadent, delicious and are filled with Pistachio Chunks. I guarantee these Pistachio Protein Balls will be your new fave healthier sweet treat.

Ingredients
  

  • 150 g White Chocolate or Pistachio Protein powder *see notes
  • 50 g Pistachios- crushed or blitz in a food processor, reserve some for topping
  • 100 g Pistachio Spread/Paste *see notes
  • 1/4 cup plant milk I use light soy milk, start with 1-2 tbsps and add as needed
Coating
  • 80 g Sugar Free White Chocolate Or normal white chocolate, see notes*
  • 1 tsp coconut oil
  • 20 g Pistachio Spread/Paste *see notes

Method
 

  1. Melt your pistachio spread/paste in the microwave for 10-15 seconds.
  2. Add crushed pistachios, protein powder, melted pistachio spread and 1-2 tbsp milk in a bowl and mix well. Add more milk if the mixture is too dry.
  3. Form into 10-12 balls and refrigerate for 10-15 minutes.
  4. Melt White Chocolate, Pistachio Spread and Coconut Oil in a microwave in 30 second increments, or over a bain marie.
  5. Dip each protein ball into the white chocolate mixture, place onto a lined pan and sprinkle with the reserved crushed pistachios. Let it set in the fridge for 1-2 hours.
  6. Store in the fridge for 7 days or in the freezer for up to 3 months.
