These Candy Cane Cookies are crispy, chewy, delicious and have a perfect balance of sweetness and peppermint. Not only that, they are lower calorie, vegan and are perfect for the Holiday season!

Ingredients
  

  • 70 g all purpose flour
  • 4 g cornstarch 1 tsp
  • 20 g white sugar
  • 40 g zero calorie granulated sweetener
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 40 g light dairy-free butter or normal butter
  • 10 g yogurt plant based to keep it vegan
  • 1/2 tsp vanilla
  • 1 tsp peppermint extract
  • 3-4 mini candy canes crushed

Method
 

  1. Preheat oven to 180c or 350F
  2. Melt the butter in the microwave for 30 seconds, then let it cool
  3. Add the sugar, extracts and 3/4 of the crushed candy canes and whisk well
  4. Add the yogurt and mix well
  5. Add the dry ingredients and using a spatula, mix until a cookie dough forms
  6. scoop 8 cookies onto a lined baking tray and flatten slightly
  7. Bake for 8-10 minutes (I take mine out of the oven on the 9 minute mark)
  8. Let it cool in the pan for 10-15 minutes
