Blueberry White Chocolate Protein Pancake Bowls- great for meal prep and no banana needed!

These Blueberry White Chocolate Protein Pancake Bowls are your new high-protein breakfast obsession. Soft, fluffy and packed with juicy blueberries and melty white chocolate, they taste like dessert, but have 33g protein and only 360 calories per bowl.

Ingredients
  

  • 1 egg
  • 50 g yogurt vanilla or unflavoured vanilla or unflavoured
  • 65 ml milk high protein light milk or soy or almond
  • 35 g flour all purpose
  • 25 g White Chocolate or Vanilla protein powder. *see notes, This recipe uses a vegan protein powder if using whey use slightly less liquid.
  • 5 g zero calorie granulated sweetener or sweetener of choice 1 tsp
  • 1/2 tsp baking powder
  • 25 g blueberries fresh or frozen
  • 5 g sugar free white chocolate chips *see notes, can sub for chocolate chunks

Method
 

  1. Preheat oven to 180c or 356 F.
  2. Add each ingredient into each oven safe glass bowl and mix well (can make as many bowls as you like).
  3. Top with blueberries & white chocolate chips.
  4. Bake for 20-22 minutes. Remove from the oven and let cool for 5-10 minutes.
  5. Serve sugar free maple syrup or normal maple syrup.

Notes

Note: This recipe is for one bowl, but I like to make multiple bowls at 1 time for meal prep. I add each ingredient separately to each bowl so that every bowl is equal and is at the same amount of calories/volume.
