Ingredients Method Nutrition Notes

Ingredients
  

Oats layer
  • 30 g oats
  • 20 g vanilla protein see notes
  • 1/2 tsp zero calorie sweetener or any sweetener of choice (e.g honey, sugar, maple syrup)
  • 80 ml almond milk or any milk of choice
  • 30 g blueberries if using frozen, use slightly less and let it thaw first
  • 3 g chia seeds 1 tsp
Blueberry Layer
  • 20 g blueberries if using frozen, use slightly less
Cream Cheese Layer
  • 20 g light cream cheese
  • 70 g yogurt see notes
  • 1/2 tsp sweetener can use sugar free maple syrup, honey etc
  • 1/2 tsp dessicated coconut for topping

Method
 

  1. Mix oats, protein powder, sweetener, blueberries, chia seeds and almond milk and add to a ramekin, bowl or jar of choice- place in freezer while preparing the rest of the layers
  2. Warm blueberries (fresh or frozen) in the microwave. Smash until a blueberry jam/puree is formed and add on top of the oats.
  3. Soften the cream cheese slightly in the microwave for 5-10 seconds. Add the yogurt, and sweetener and spread on top of the blueberry layer
  4. Refrigerate overnight or for a minimum of 5 hours and enjoy straight from the fridge
  5. Top with a sprinkle of dessicated coconut and extra blueberries and enjoy
