Apple Pie Protein Pancake Bowls with Gooey Custard Middle- meal prep & banana free recipe

These Apple Pie Protein Pancake Bowls are the coziest high-protein breakfast for busy mornings. They’re soft, fluffy, and packed with warm apple pie flavor, plus a creamy custard center that makes every bite taste like dessert. With over 30g of protein, simple ingredients, and zero banana needed, they’re perfect for meal prep-just bake, store, and heat.

Ingredients
  

Stewed Apples
  • 2-3 apples peeled & chopped
  • 1-2 tbsp sweetener zero cal
  • cinnamon & nutmeg to taste
  • 2 tbsp water
  • 1 tsp cornstarch
Pancake Bowl bases (ingredients per bowl, this recipe makes 4 bowls)
  • 1 egg
  • 50 g yogurt I use Pauls Plus Protein Vanilla
  • 70 ml milk high protein light milk or soy or almond
  • 35 g flour all purpose, sub for oat to keep it gf
  • 25 g protein powder vanilla works best. This recipe uses a vegan protein powder, if using whey, use slightly less liquid.
  • 5 g zero calorie granulated swetener or sweetener of choice, 1 tsp
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla optional
  • cinnamon to taste
  • 40 g protein custard *see notes
  • 1/4 stewed apple mixture

Method
 

  1. Preheat oven to 180c or 356 F.
  2. Stew apples over the stove along with sweetener, cinnamon and nutmeg for 2-5 minutes. Add cornstarch slurry and mix on low heat until thick.
  3. Add each ingredient into each oven safe glass bowl and mix well (4 bowls in total).
  4. Add 40g protein custard in the middle of each bowl, then evenly divide the stewed apples on top of each bowl.
  5. Bake for 20-22 minutes. Remove from the oven and let cool for 5-10 minutes.
  6. Serve with sugar free maple syrup and enjoy.
